Countdown-34 days till D day

Wow wow wow.  34 days until baby boy #4 is "Due".  I know he could come before, most likely after, but wow....that's soon!  I'm finally thinking about the birth and what I want.  My perfect birth would go like this....

Halloween day (my favorite OBGYN works Thursday nights) I would start getting mild contractions early in the day, about 20 minuets apart.  I don't know if it's labor because I've never had a labor start with contractions (just water breaking), so I ignore it.  

A few hours later they are 10 minuets apart, still not "painful" but getting uncomfortable.  I get a burst of energy and clean and get ready.  By the time hubby gets home from work I am positive I am in labor.  Totally excited that my water hasn't broken. 

My Mom will be there, now hubby is home, and I get in the bath.  Ahhhh relief (so everyone says, with Reece the bath sent me to the moon with intense contractions!).  

An hour later I get out, can't talk through contractions anymore, must move.   I get dressed, get the boys dressed in their costumes for trick or treating, and send them with Grandma.  I think I should go with them and walk...but then another contraction hits and oh no...I'm staying here with the hubby, bouncing on the birth ball.  

An hour later the boys come back from trick or treating and are so excited for their brother to be born!!! I am very uncomfortable, but it's not like it was with Reece.  When there is no water bag to cushion the contraction all I can describe it as is "raw" unbearable pain. 

Grandma bathes the boys and puts them to bed.  Since I'm all packed and ready for hospital I lay down and try to relax my entire body like the Bradley book says.  Contractions are 5 mins apart and I think, "This is awesome!".  I've never had breaks between contractions.  My OB says to go in when they are 5 mins apart but I decide to lay down because I'm sure I am not gonna be as far as I hope I am, and I do NOT want to be waiting at the hospital for hours and hours to dialate. 

By now it's been about 12 hours since my first contraction and they are getting more intense.  Trying to relax my whole body.  Breathing.  I decide, it's time to go!!! 

The car ride is not so fun.  But luckily we only  live a few miles away. 

Get to the hospital around 10:00pm, it's good and quiet.  I get checked in quickly, the nurses are sweet and remember me from bringing them cookies.  (I did just bring them cookies last week!! LOL) 

I'm DREADING getting checked because I am scared my water will break. 
"Please be careful...please don't break my water....."


Contractions are more intense, and more often.  Ouch....ok this hurts.  Don't touch me.  Ok contraction over, you can check me.  

"Wow....You're 9cm!!!" 

"Yessssss!!!!!!!" I shout to everyone.  "This is awesome."  Oh ouchie another contraction.  Still only half as bad as with my previous dry labors.  

"She's a 9! Let's get her in a room!" I hear the nurse shout.  Moans from other ladies in triage because I get a room first. {Sorry ladies}.  

Being wheeled to the room I feel the urge to push.  My water still hasn't broken.  Totally giddy that this is happening, I tell my husband the baby is coming.  He panics a bit and yells "The baby is coming!"  

"Don't push! Page the doctor!"  

Trying hard not to push, ok this is the worst part.  My body wants to push....(always hear ladies say that lol).   I'm squeezing my legs together.  I have to get on the delivery bed....I'm worried if I stand up the baby will come out.  Shake my head, no no that won't happen.  Oh gosh another big contraction...totally feel the baby coming!!!! 

Get on the bed, doctor runs in, washes up, I'm feeling lots of pressure but no "ring of fire" (this is a fiction remember?), I push twice and baby's head is out! Oh it's kinda tough to get his shoulders out...don't remember the other boys being this difficult.  

One more push! Gah!! The pain! Whew....relief. He's born in the Caul (water bag)!!! Amazing! The doctor breaks the tough bag and the baby starts crying! He's on my chest! I'm feeling amazing!!! They don't cut the cord until it stops pulsing, and he stays on my chest.  He had dark brown hair! :) 

When they weigh him we are all shocked to find out he weighs 9 lbs 4 oz! No wonder it was hard to push his shoulders out... 

I didn't tear, I feel great! Deliver big healthy placenta, my husband and I admire our new baby, and I start to breastfeed him, he latches right on.  I can get up right away to pee.  Wow, this was awesome.  The End.  

I almost want to laugh right now.... ;)  That's so the OPPOSITE of all the my other births! I desperately want a birth like that, and if you have had a birth like that then....no fair. 

Mine go more like: "Oh crud my water just broke!".  We scramble to get ready (or in Reece's case I'm in town by myself with a dead cell phone...).  Panic, panic...it's gonna start hurting.  Hurry up, get to hospital. 

Always a LAME-O 4cm when I get to the hospital. Dang.  By now contractions are already full blown 12 out of 10 pain scale... lasting one minuet long, coming every minuet.  Can't catch my breath or focus on relaxing.  Not getting any breaks.  I have had nice nurses and rude nurses.  I have had to wait in triage like this for 3 hours with Cody.  Wanting to punch someone, but to stiff to move..."Don't touch me!" is all I can say.  Must get IV and all that business.  I finally get to my room, beg for an epidural. 

Epidural man comes..."You can't move...stop moving!" want to punch him in the face too.  But I don't, because he has the means to make me feel no pain.  Ahhhh finally relief!!! 15-30 minuets go by, I'm ready to push.  What the?? 4-10 in 15-30 mins?? Yes thank you epidural for finally allowing me to relax so my body can dialate.  Push for only a few minuets (Shane 25 mins of pushing, Cody 3 minuets of pushing, Reece 7 minuets of pushing).   Healthy beautiful baby boys.  :)

I've loved all my births.  I've been blessed to have minimal complications (just a lot of pain the whole time).   

We will see in a month and a week or two how this labor goes..... eeeekkkkk!

Getting Ready for Baby!

Or.....LACK thereof! I have been waiting for nesting to kick in and it's not.  I have a nesting dysfunction. It's broken.  There is so much we need (after 3 boys using all the same stuff we need a lot! car seat, double stroller, a breast pump, socks, diaper bag, ect) and so much to do. 

I need to get the swing, bassinet, and pack N play out of the garage, washed and set up.  I need to wash and sort all the newborn/baby clothes, organize the baby's room which is such a hazardous area at the moment with all my photography props and equipment stuffed in the closet.

AND....I need to figure out where the baby is going to sleep.  In our room for a few months, yes.  But after? Sigh. Idaknow.

Reece sleeps in the crib in Shane and Cody's room, but all of Reece's clothes are in his room/the nursery.  I don't have Reece in his room because it's at the front of the house with a big window and it scares me to have him in there.  Ok I know I'm crazy. 

Anyways, so much to do.  5 weeks to do it in.

Thinking.

*wrote this post yesterday and it didn't get publish for some reason...

You know the thing about blogging is everyone see's your ups and downs? And if a blog doesn't have ups and downs then they just aren't writing about it. 

Sometimes I want to give up everything. Other times I'm unstoppable. Humans. 

Right now I'm in a sort of rut where I'm not sure where I lie between charging and quitting.  

 I feel like I waste time trying to do things that go nowhere. Probably because I don't pray and see what He wants me to do. 

I'm praying about some serious decisions right now with our future.  Praying for God's will. I won't jump into anything. 

My husband has been telling me for a year I should go to nursing school. 
"Yeah right with 4 boys." I'd say. "Yeah right I can't handle blood!" "No way could I take care of other people I have 4 little ones and you!" 

But one day, My husband and I were talking about my goals and he said, "why don't you do something that helps others?" Not in a judgmental way. But he says I'm a caring person and I would do great working as a nurse. 

I've mentioned before that I wanted to be a lactation consultant. I really want to help moms breastfeed. Well I recently found out its very hard to get hired as one with out your RN. Hmmph. 

Of course I have concerns...being a full time student and a mom. Being there for my family is my most important job. Also there are things that I'm sure I wouldn't like working with in a hospital, blood, death, sickness, ect.  I was talking to my husband about it and we were discussing my friends expirience in nursing school who had to deal with an awful situation for a poor man. My husband said, "but he needed help, he needed compassion." 

I thought about Jesus and how he touched the sick, the lepers, and even the dead. He had compassion!! 

So I started to slightly ponder it. Then pray about it. Now I'm actually considering it. I'm not rushing into anything (or even saying I'm doing this) and it would Obviously not be for a LONG time seeing I'm about to have a baby.  I'm talking years. Of course. 

Many of my nurse friends love it because they work 3 nights a week and don't miss being home with the kids.  I'd die of exhaustion but... ;) 

Some people have already began to judge me considering this. That I should never even think to have a job with children. Sad when people judge. I want to help my family financially, be able to buy them healthy organic foods, keep them in private school, have them play sports, ect.  

Oh and if you have something rude to say why don't you go ahead and umfollow my blog? THANK you. (Got a very rude comment last week. Why do annonomous people read blogs and leave mean comments?) 
Anyways....

Also, I want to help moms breast feed. Sue me. 

If its God's will, then that's all that matters. If its not, I don't want to do it. It is possible to be a keeper of the home and earn an income. I mean, the Prov 31 wife did and she had maids too. Lol. 

I have lots of goals. I want to achieve them. But MOST important, IM A MOM!! A wife and a mom and that's my most important job! :-) 

I'm still making meals from scratch! Tonight we had an amazing dinner I just whipped up! Must have again. 

I sautéed chicken in olive oil, seasoned w Cajun seasoning. Added tomatoes (from our garden!), organic spinach, and heavy whipping cream. Served with pasta. Oh yum!! It tasted better than it looked. Ok I'm gonna read "Safe Haven" and keep my mind off things.

What I am.

I've said before, I don't want my blog to come across as a "How to" anything blog. Because quite frankly I KNOW I am not qualified to tell anyone how to do anything.  Except maybe photography or something but that's a separate blog. (Please go follow my photog blog I have 0 followers! LOL)

But I of course want to share what works for me and my adventures in trying to become the Mom and Wife I want to be.  That's what this blog is all about.  But truth is I'm so far from where I want to be.

What I really am:
A frazzled wife and mom
206 pounds
Not fit. Can't even run for 20 seconds as of late...I know. I had to chase Reece the other day at church.
Love cooking from scratch, but half my attempts turn out like poop.  We can't afford all organic, grass fed foods, but I do what I can.  I get organic produce at Costco and farmers market for good deals usually.
Unorganized. Big time.
Cluttery.
Thinks one can craft, but can not. 
Spends more money than I should.
Doesn't know what an adverb is.  For real. Don't judge me, I went to public school.
The pictures in my head are much better than on my camera.
Wants to decorate but doesn't have money to.
Un-successful blogger.
Doesn't witness for Him enough. Not even close.

 Lately I just feel so overwhelmed with so many things.  One thing that really weighs on me is feeding our family.  Sounds stupid I know.  In the last 6 months or so our grocery needs have gone up dramatically!  I spend so much time trying to budget and plan our meals so we have enough. 

But did you know that a husband that works a very physical job, and three growing boys, plus one boy in the oven need a lot, A LOT of food?  Let me just give you a little glimpse :)

Shane LOVES egg and cheese Toaster Struddles.  I never buy them. (I know they are processed and not the best!)  But he has been asking me for them for about a week so for being a good boy at school all week I bought him two boxes.  He ate SIX egg and cheese toaster struddles yesterday and wanted more.  Not even phased.  Then, today, he ate his sandwich and lunch I packed him at school, came home, wanted more Toaster Struddles. I made him the last three, he ate those.  Then immediately he wanted peanut butter toast.  He ate THREE pieces of peanut butter toast loaded with peanut butter. 

That's just ONE boy. 

How bout the fact that I am suppose to be eating 80 g of protein a day while pregnant? I don't make this goal usually.  

Then let's talk about my husband that walks around 80 acres in the heat all day doing physical labor and works out hard core weight lifting on his lunch break. 

This morning I scrambled 7 eggs in coconut oil (for extra fat!) with ham and cheese, and made two big breakfast burritos.  One for his breakfast, one for his lunch.  Besides the breakfast burrito in his lunch I made him a PB&J sandwich (homemade jelly!), tortilla chips, from scratch sugar cookies I made last night, an apple, an orange, a granola bar (want to make these from scratch!) and a protein shake for after his workout. 

The other two boys ate eggs for breakfast, with toast and butter, they've had a gazillion cups of milk, juice and water, and still want more food.  Oh and in case you're wondering, the 21 month old decided he didn't want diapers anymore.  He won't keep them on.  Fun. So potty training is in effect. He peed on the floor 3 times this morning and once in the potty. 

ALL DAY LONG I MAKE FOOD. 

We go through more milk than anyone I've ever met.  I'd love to buy only organic raw, grass fed milk.  TRUST ME!!! It's my dream to give my family the BEST!!!!! Seriously though, we go through about 18 gallons of milk in a month.  Is that a lot?? And I don't even drink the recommended 4 cups a day like the Weston A Price foundation says a pregnant lady should!! 

All that to point out that......we need more money for food.  LOL.  I am seriously trying to get more photo jobs, and I'm even thinking about going back to school for a nursing degree (although I don't think I could leave my boys!!) because when these four boys hit puberty our food bill will be our biggest expense I think. 

I've decided to lay off the couponing a little bit and heres why....I was buying things I don't normally buy. And all the food you get is processed foods I don't usually buy.  I still want to use them for dog food, personal items, cleaning supplies, ect.  But they don't give coupons for milk and chicken.  SHOCKING right?  But I have been price matching and it's helping a lot!!!!

Sometimes I feel so overwhelmed with what I want to do, what I have to do, and what I'm NOT doing.  Ya know what I mean??

I know that God cares about all our needs and He does provide for us every single day.  I know I shouldn't worry and I should just give it all to Him!!!

This post wasn't for people to feel sorry for me...I'm so so blessed!! And so thankful for all we have!!!!

I know with HIS help I will master the arts of all the things I want to learn and be.  Or better yet what HE wants me to be.  I just have to remember that it will take time.  I want it all RIGHT NOW.  I don't want to wait.

But I must.

Behind!! From scratch Tortillas

 
 
I can't believe it's already Thursday!!! This week is flying by and so busy.  I'm behind on posting my from scratch adventures.  Monday I made homemade tortillas, and we ate them with shrimp tacos. Yum. 
 
Tuesday I made from scratch pie crust and chocolate pie.  That one was a bit tricky....but it is good. My husband said it's amazing. LOL He's easy to please. 
 
Tuesday I also made homemade gelatin gummy fruit snacks which look amazing in the recipe pic....but were...well....disgusting.  Post about those later too. 
 
Yesterday I made homemade marinara sauce which also didn't turn out quite like the recipe...I don't know if these people really test out the recipes! Ha ha
 
Yesterday I meal planned all morning, picked up Shane from school, then went to Costco, Target and our Mexican store.  Fewww. 8+ months pregnant and 3 boys, going to 3 stores, wowsers.  Came home, did the dishes, unloaded all the groceries and put them away, finished dinner, got ready for church, went to church, came home fed boys snack, got them ready for bed, put them to bed, then I was OUT.  

I am REALLY loving cooking from scratch.  Especially baking.  I loved these tortillas too because theres just something about getting your hands dirty with flour and rolling it out into something beautiful.  I love it. My boys and hubby are also loving it. They keep asking me to make pumpkin pie, and when I am in the kitchen they run in saying, "what are you making today?" It's so sweet :)

I accidentally made the tortillas too thick, but this recipe is SO easy and like $.50 to make! Seriously can't beat that.  

 
Tortillas From Scratch 

 
3 Cups Flour
1 tsp salt
1 tsp baking powder
1/3 cup oil
1 cup warm water

From Scratch Chicken Strips






What's a kids favorite food? Besides hotdogs, pizza, and Mac N Cheese? Chicken strips! I created my own recipe and they were delish.

Homemade from scratch chicken strips
 

You need:
Boneless, skinless chicken tender strips, thawed.

I always pour in too much flour because I don't measure. Shh..Bad I know.

1 cup is enough!

1 Cup Flour mixed with 1/4 cup seasoned breadcrumbs
1/2 cup milk mixed with 3 eggs

Heat 1 inch olive or coconut oil in pan to hot.
Dip thawed chicken in egg & milk mixture.
Dip in flour and bread crumbs until covered on both sides.
Fry chicken until cooked all the way through!!

Viola. Easy. I think you could bake these too, but I'm really bad at baking chicken.....

Learning to crochet

I want to Crochet. I really want to be the mom that makes crafts and always has nice handmade gifts to give....it's so not me. I'm usually re gifting things with used bags or something ghetto like that. Shhh. 

Usually my attempts at making crafts fail. Big time.  But I believe you can learn anything. 

 Turns out I like crocheting. Here was my first attempt at a wash rag..not so pretty. The second one came out much better :) 

Now I am attempting doing a baby blanket for boy #4 (countdown----7 weeks exactly till D-day!!) 

 But the patterns are so complicated! They say "easy" but then it's like I'm reading a different language. 
Ch 8, dc 12, blo 4 whatever. 

No clue. But I WILL learn. I will. 

I am feeling better thank God. I lost 7lbs from being sick! Ack! 

Today I already made something from scratch and will post tomorrow :) Also need to post about my from scratch chicken strips I made last week.

Sick

I am sick with some kind of tummy bug or something. 

I'm dehydrated as well :( I'm a bit worried about the baby but I know we will be ok. 

On a good note how does my new blog look??!!!!! She is just finishing it up :) ill leave a link to her site in a bit! 

Please say a prayer for me, it's been months since I've been sick and I HATE tummy bugs.

Day 4- Homemade Coffee Creamer and Homemade Whip Cream

You may be waiting for more complicated meals from scratch (tomorrow!)...but whip cream and creamer are a staple of mine so I had to include them! I loooovvveeee whip cream on my coffee in the morning, as well as creamer of course.  I get sad when we are out of either one.

Oh my goodness let me just say I'm in love with making homemade whip cream! I'm obsessed with cream in general.  It can do so much....whip cream, creamer, ice cream, butter...sour cream...I mean what a beautiful food.

Ok here it is.  Super easy and amazing.  My  boys and hubby loved it :)

Homemade Vanilla Cinnamon Coffee Creamer


2 Cups Heavy Whipping cream (I've tried it with half and half and this is better!)
2 Tbsp Sugar
2 Tsp Vanilla
10 Dashes of Cinnamon 

I mixed mine together with my mixer for 2 minuet to get it a little frothy, but you can just stir by hand.  Voila! All done! So easy, I know.  {Like I invented homemade creamer.}



 

Homemade Whip Cream

I am sure you all know how to make this already....but here it is anyways. 

2 Cups Heavy Whipping Cream
2 Tbsp Sugar (regular or powdered)
1 Tsp Vanilla

Sounds just like the creamer right?

Well this one is whipped into PERFECTION.

Whip on high until it makes peaks.  It took me about 7 minuets. 

I am storing them in mason jars (didn't have any big ones!)

I know this is so much healthier than store bought whip cream! PLUS you get soooo much more.

I was in love with this cup of coffee.

Day 3- Homemade Tortilla chips

I'm glad I had something easy for yesterday.  It was $1.50 Taco Tuesday at Rubio's and I had planned on getting us Tacos.  So I made homemade corn tortilla chips to go with them.  I don't think they qualify as "from scratch" because I didn't make the corn tortillas.  But....they are homemade! They were so so easy.

Ingredients in corn tortillas are all natural and gluten free.  Plus there is only a few ingredients.

 I think this is cheaper than buying Tortilla chips too! And they were very yummy!! I used about 20 tortillas.

Gluten Free!!

Homemade Tortilla Chips: 
 Cut them into quarters.
 Laid them on a baking sheet. (You aren't suppose to crowd them.  But I'm kind of a rebel.)
 Brush or spray olive oil on both sides, then salt them.  Maybe some lime if you have it. 
Bake for 25ish minuets (mine took about 30 to get crispy, if you have less on one pan it will only take about 10-15 mins).

Then eat them.  And say, "Yum." 

Day 3, easy peasy.  I should make these more! It was my first time! :)

From Scratch Day 2- French Bread

French bread is not easy to make!!! Lets just say it turned out less than perfect. :( 
It actually doesn't taste bad. The taste is good. But it's not soft. 

My intention was to make French bread from scratch, then make homemade bruschetta with it.  

I really should have read the recipe better because it took FOREVER to make! "Let rise 2 hours." "Beat down, let sit 10 mins" "roll out let rise 45 mins" my soul! 

Somewhere along the line something happened...or the recipe was wacky (sparing you from it) and the bread was tight, semi hard and dense.  Not fluffy and soft :( boo. I'm gonna try it again I think with a different recipe. The bread is eatable, has good flavor, but it's not soft, fluffy fresh baked bread that I hoped for. 

Day two = FAIL.

30 Days of Cooking From Scratch! Day 1- Chocolate Cake with Frosting

 Here it is!!!! My big challenge to myself!!!!!
Remember how I said my husband wrote down that he would love me to make "gourmet" foods? LOL

Well, I have already been really thinking I want to make more foods from scratch.  It's so much better for us.  And you know what? It's not that much work! This challenge is for me to learn how to cook from scratch!!!! I admit...I am not a natural cook.  I don't loooovvvveee cooking.  Maybe it's because I never learned how to add proper flavors and everything.  I love the thought of cooking amazing food.

I love cooking shows.  I love serving from scratch chocolate cake to my family knowing I am not serving them a bunch of chemicals in box cake and canned frosting.  

I do love to bake, and I've always been good at that.  But let me tell you what....this month of September is putting me OUT of my comfort zone big time!!!!

 Yesterday I started with something I knew I could tackle.  A from scratch chocolate cake with my mother in law's homemade chocolate frosting recipe to top it off.  Oh yes.

Here's my stance on the subject.....I KNOW certain foods like sugar aren't the best for us.  But I also KNOW that we are going to eating treats every now and then!!! So how much better to make it from scratch like the good ole days then to buy it boxed, canned, or already made from the store?  It's a big difference!! And I am NOT judging anyone that makes cake from a box and uses canned frosting.  That is usually me.  When we got married 7 years ago, all I made was boxed and canned foods or frozen veggies and dry chicken. Trust me.  This is just me trying to grow and learn.  :)

 All-purpose flour
 unsweetened cocoa powder
 baking soda
 baking powder
 teaspoon salt
 butter, softened
 sugar
 eggs
 teaspoons vanilla

Homemade Chocolate Frosting:
Butter
Sugar
Evaporated milk
Chocolate chips

Here's how my first adventure went.....

It didn't start out too good.  I bought a huge sugar and flour from Costco for this month, and while getting out the bag of sugar it RIPPED on the cabinet and sugar went EV.ERY.WHERE.

Then the toddler stomped in it and tracked sugar all over the house.  That was fun. 

K, here's the recipe I used...and it is DELISH.  Got the cake recipe off Pinterest.  

Easy Chocolate Cake From Scratch with Homemade Chocolate Frosting 


2 1/2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1 3/4 cups sugar
3 eggs
1 1/4 teaspoons vanilla
1 2/3 cups milk

Heat oven to 350 degrees, grease two round cake pans with olive oil (I hate pam!) and flour pan.
Set your oven timer!!! Took mine about 28 mins.  Check your cake around 25 mins.

For the frosting:
Melt 1/4 cup butter in pot
Add 6 Tbsp sugar when butter is melted
Add 3/4 can evaporated milk
Bring to boil (my mother in law always says don't let it boil over! its a mess!)
Add 2 cups chocolate chips and remove from heat
stir, and let sit until cool
